De-bone the wings.

This is easier than it sounds.

Force the wing at the joints then just push the bone through the skin.

It pops right out.

,Heat a bit of oil in the skillet.

No need to use a lot.

This is just to help the initial heat transfer.

As the wings cook, theyu2019ll render more fat.

,As the wings sizzle, sprinkle salt and spices of choice.

I like to add turmeric, a lot of cumin, and a bit of cardamon powder.

Put the lid on.

It takes around 10 minutes for the skin to become golden crispy.

,Lift the lid and flip the wings.

Put the lid back on, but crack it open.

This keeps splatters down but lets the steam out so the skin stays crispy.

Fry for another 5 minutes.

,Fire off.

Squeeze honey directly into the skillet.

Stir the wings a bit to cover evenly.

Serve immediately.
